Almond Sugar Cookies
Preheat oven to 375°F. In a large bowl, combine butter and cream cheese. Blend in sugar. Add egg yolk, vanilla and almond extracts and stir in flour and salt. Mix well. Cover with plastic wrap; refrigerate at least 2 hours for easier handling. Remove dough from refrigerator. On a lightly floured surface, roll out 1/3 of dough at a time to ¼ inch thickness. Cut with lightly floured cookie cutter and place on ungreased cookie sheets. Leave plain or sprinkle with colored sugar. Bake for 8-12 minutes or until light golden brown on edges. Remove from cookie sheets and cool on racks. If desired, frost cookies.
