Apple-Pomegranate Sangria

For simple syrup:
½ cup sugar
½ cup water
2 tsp. The Spice Hunter Pumpkin Pie Spice Blend

For sangria:
1 750 ml. bottle red wine
¼ cup triple sec
½ cup brandy
1½ cups apple cranberry juice
2 cups diced apples
1 cup pomegranate arils (seeds)

To make the simple syrup, combine sugar, water, and pumpkin pie spice in a small saucepan; bring to a boil, reduce heat, and simmer 3 minutes. Remove from heat, strain, and set aside to cool to room temperature. Once syrup is cooled, stir together with wine, triple sec, brandy, and juice in a large pitcher. Add fruit and chill well. Serve over ice with fruit if desired.
