Black Beans with Garlic and Chile Pepper
Follow directions for soaking black beans on package. When finished soaking drain beans and set aside. In a stockpot over medium-high heat add vegetable oil and onion. Cook for about 2 minutes. Add beans to stockpot and cover with water to 3 inches above beans. Bring to a boil, cover, reduce heat and simmer for about 2 hours or until beans are a desired texture. Add water during cooking to keep at 3 inches above beans. When beans are done, remove lid, increase heat and boil until thickened. Add garlic, chile and salt to taste before serving.
