California Angel Hair Pasta

3 Tbsp. extra-virgin olive oil
4 cups tiny broccoli florets
2 Tbsp. The Spice Hunter Pine Nuts
¾ cup double-strength chicken stock
1 tsp. fresh thyme leaves, plus 4-6 sprigs for garnish or ½ tsp. dried
3 Tbsp. unsalted butter
4 oz. goat cheese, crumbled
freshly ground pepper
angel hair pasta or thin pasta

Bring a large pot of water to a boil with 1 Tbsp. olive oil. Meanwhile, sauté broccoli and pine nuts in 2 Tbsp. olive oil for 1 minute and add stock. Bring to a boil. Add thyme, pepper, butter and cheese. Mix together until cheese melts. Lower heat to warm. Add pasta to pot of boiling water, cook until almost done. Drain pasta and rinse under hot water. Add pasta to the sauce and toss gently. Season with pepper.
