Chicken Cacciatore

3 lbs. fryer chicken pieces
½ cup flour
¼ tsp. freshly ground pepper
½ cup olive oil
3 Tbsp. butter
½ lb. sliced mushrooms
1 (6 oz.) can tomato paste
1 (16 oz.) can whole tomatoes, drained
½ tsp. freshly ground pepper
2 tsp. The Spice Hunter Mediterranean Oregano or 100% Organic Oregano
1 onion, diced
2 cloves, garlic
1 tsp. parsley
1½ tsp. salt

In a bag, shake chicken in flour, salt and pepper. Brown in hot oil with garlic in a large skillet. In another skillet, heat butter and add mushrooms and onion. Cook until lightly browned. Add to chicken mixture with paste, tomatoes and remaining ingredients. Cover and cook slowly for 25-30 minutes, stirring once or twice.
