Dried Fruit Salad

8 pitted prunes
10 dried apricots
1 cup apple juice
1 The Spice Hunter Indonesian Cinnamon Stick, broken
1 tsp. The Spice Hunter Whole Penang Cloves (about 20)
1 fresh banana, peeled and sliced
1 fresh orange, peeled and cut bite size
1 apple cored and cut bite size
½ cup orange juice
3 Tbsp. orange marmalade
¼ cup chopped pecans

Combine prunes, apricots, apple juice, cinnamon stick, and cloves in saucepan. Bring to a boil, remove from heat and let soak overnight in the refrigerator. Just before serving, spoon the prunes and apricots into 6-8 serving dishes. Top with the fresh fruit. Strain the remaining apple juice mixture; stir in orange juice and orange marmalade. Pour over fruit. Top with pecans.
