Indian Rice Pilaf

1 cup rice
1 cup water
1 cup chicken or vegetable broth
1 Tbsp. The Spice Hunter Tandoori Global Fusion Rub
½ cup frozen peas, thawed
½ cup toasted, slivered almonds
½ cup golden raisins
Salt to taste, if desired

Combine rice, water, broth, and seasoning in a medium saucepan. Bring to a boil, cover and reduce heat to a simmer, cooking about 15 minutes or until water is absorbed. Remove from heat, let sit 5 minutes and fluff with a fork. Stir in peas, almonds, raisins, and salt if desired, then serve.
