Island Chicken

4 (6 oz.) chicken breasts
¼ cup sweet onion, finely chopped
1 tsp. The Spice Hunter French Thyme or 100% Organic Thyme
1 tsp. salt
1 tsp. The Spice Hunter Coarse Black Pepper or 100% Organic Coarse Black Pepper
2 tsp. The Spice Hunter Ground Jamaican Allspice or 100% Organic Ground Allspice
4 tsp. sugar
½ tsp. The Spice Hunter Ground Red Pepper or 100% Organic Ground Red Pepper (Cayenne), or more to taste
2 Tbsp. olive oil

Combine onion, spices, salt, and sugar in a small bowl. Prick chicken breasts several times with knife point. Place in a nonreactive bowl, and rub onion-spice mixture over both sides of each breast. Cover and refrigerate about 20 minutes. Heat oil in a large skillet. Add chicken in single layer. Sauté gently on each side 5-10 minutes, depending on thickness. Chicken is done when juices run clear.
