Mediterranean White Bean & Barley Cakes

2 (15oz) cans white beans, drained and rinsed
1 Tbsp. vegetable oil
1 small red onion, minced
1 carrot, finely grated
2 cloves of garlic, minced
1 cup cooked barley
¾ cup panko breadcrumbs
½ cup grated parmesan cheese
1 Tbsp. coarse ground The Spice Hunter Salt Free Mediterranean Herb Organic Grinder

Place white beans in a large bowl and mash with a fork; set aside. Heat oil in a sauté pan over medium heat. Add onion, carrot and garlic to pan and sauté until softened. Stir vegetable mixture into mashed beans, along with the barley, panko, parmesan and seasonings. Form into 8 patties, chill at this point if making ahead of time. Cook patties, 4 at a time, in a large sauté pan for 3 to 4 minutes on each side or until golden brown and heated through. Serve with pasta sauce or as desired.
