Oaxaca Pasta Salad

For dressing:
¾ cup Duke’s Mayonnaise
2 tsp. The Spice Hunter Red Pepper (Cayenne)
2 large garlic cloves
½ tsp. The Spice Hunter French Thyme
½ tsp. The Spice Hunter Fine Black Pepper
1/3-½ cup fresh lime juice
1/3 cup green olives
For salad:
1 lb. shrimp, cooked
¼ cup fresh lime juice
4 cups small pasta, cooked and chilled
1 can black beans, rinsed and drained
1 can corn, drained
½ cup green onions, thinly sliced
½ cup carrots, grated

In a blender, combine all dressing ingredients and blend. In a separate bowl, pour lime juice over cooked shrimp and let sit while preparing the rest of the salad. Toss rest of salad ingredients in a large bowl. Drain shrimp from lime juice, and toss all ingredients together. Let chill and serve.
