Poached Apples

2 cups apple cider
4 apples, peeled and cored
1 The Spice Hunter Indonesian Cinnamon Stick
1 tsp. The Spice Hunter Whole Penang Cloves
½ cup brown sugar1. Bring cider, apples, cinnamon and cloves to a boil in a saucepan. Reduce heat and simmer for about 25 minutes until apples are tender.

2. Remove apples and add sugar to the cider. Boil until reduced to about ¾ of a cup, about 20 minutes.

3. Strain and spoon the sauce over the apples. Serve a la mode.
