Pumpkin Spice Simple Syrup

8 oz pumpkin puree
1 cup water
1 cup granulated sugar
2 tsp The Spice Hunter Pumpkin Pie Spice

Add pumpkin puree, water, sugar and pumpkin pie spice to a saucepan on medium heat. Bring mixture to a boil over medium-high heat, stirring frequently. Bring down heat to low and simmer for 20 minutes. Turn off heat and let sit for 10 minutes. Strain the pumpkin mixture with a fine mesh strainer into an airtight container. Let cool completely before making the cocktail. Syrup can be stored in the refrigerator for up to 7 days. Yields about 2/3 cups of syrup. You can double the recipe if more is needed.
