Quick and Easy Posole

1 Tbsp. vegetable oil
1 lb. pork, cut into bite-sized pieces
1 small onion, chopped
6 cups chicken broth
1 (25 oz.) can hominy, drained
1 Tbsp. The Spice Hunter Ground New Mexico Chile Pepper
1 tsp. The Spice Hunter Ground Turkish Cumin
1 tsp. The Spice Hunter Granulated Garlic
Salt and pepper

For Garnish:
1 lime, sliced into wedges
3 cups shredded cabbage
1 bunch radishes, cleaned and sliced
2 jalapenos, diced
Chopped fresh cilantro
1. Heat the oil in a large soup pot over medium heat. Add the pork and onion and cook until pork is done and onion is very soft.

2. Add the chicken broth, hominy, ground chile pepper, cumin and garlic. Stir to combine; bring to a boil, then reduce heat and simmer for 10 minutes.

3. Taste, adjust seasonings and add salt and pepper if desired.

4. Serve warm and pass condiments on the side.
