Roasted Garlic Mashed Potatoes

3 lbs. Russet potatoes, peeled and quartered
salt to taste
4 Tbsp. butter
1 cup half & half or milk
½ cup sour cream or plain yogurt
1 tsp. The Spice Hunter Granulated Roasted Garlic
½ tsp. The Spice Hunter Ground Muntock White Pepper
1 tsp. The Spice Hunter French Thyme

Put the potatoes, with water to cover, and a dash of salt in a 2-quart saucepan and bring to a boil. Simmer, covered, until the potatoes are soft, 20-30 minutes. Drain well in a colander, then return to pan. Mash to a coarse consistency. Combine the butter, half & half or milk, and sour cream or yogurt and heat to warm in a separate pan. Slowly add mixture to potatoes and mix together with a hand mixer or potato masher until creamy. Mix in pepper, thyme and salt, adding more to taste, as desired.
