Satay Sauce

4 Tbsp. The Spice Hunter Thai Seasoning Blend
2 cups coconut milk
2 Tbsp. lime juice or tamarind water
1 Tbsp. fish or soy sauce
1 Tbsp. raw sugar
¾ cup peanut butter
2 tsp. chopped cilantro

Combine 2/3 cup coconut milk with Thai Seasoning in a small saucepan and cook over low heat for 10 minutes. Add lime juice, fish sauce, sugar and an additional 1 cup coconut milk to saucepan. Simmer 4 minutes. Remove from heat, blend in peanut butter and cilantro, then let cool. Before serving, if consistency is too thick, stir in additional coconut milk until desired thickness is achieved. Serve at room temperature. Great with chicken, grilled meat and fried tofu.
