Savory Herb Tomato Pie

1 unbaked pie crust
1 medium sweet onion, cut into rings
1 Tbsp. vegetable oil
1 ½ lbs. roma tomatoes, cut into ¼ inch thick slices
1 Tbsp. coarse ground The Spice Hunter Salt Free Mediterranean Herb Organic Grinder
1/3 cup shredded mozzarella cheese
1/3 cup grated parmesan cheese
¾ cup Duke’s Mayonnaise with Olive Oil

Preheat oven to 350°F. Bake pie crust until golden brown, about 10 minutes; set aside. Sauté onions in oil over medium heat until soft and translucent. Place onions in bottom of baked pie crust. Toss tomato slices with herbs, then place on top of onions. Combine cheeses and mayonnaise in a small bowl, then spread over tomato slices. Bake for 25-30 minutes or until golden brown. Cool slightly before serving.
