Shrimp, Avocado & Cucumber Salad

4 tsp. The Spice Hunter Korean BBQ Global Fusion Rub
4 tsp. rice vinegar
4 tsp. Duke’s Mayonnaise
1 medium cucumber, quartered and sliced
1 bunch green onions, cleaned and chopped
1 avocado, halved, pitted, and diced
1 cup cooked shrimp, chopped
Salt and pepper
Place first 3 ingredients in a large bowl, whisk until creamy. Add vegetables and shrimp, and gently fold together. Season with salt and pepper if desired. Serve in lettuce cups or over mixed greens.
