Spaghetti with Fennel Sauce

2 Tbsp. olive oil
1 large onion, finely chopped
2 Tbsp. golden raisins
2 Tbsp. The Spice Hunter 100% Organic Fennel, crushed
1 Tbsp. The Spice Hunter Pine Nuts, blanched
1 (28 oz.) can diced tomatoes
1 cup dry white wine
1 cup sliced black olives
1 (6 oz.) can tomato paste
1 tsp. salt, to taste
1 tsp. The Spice Hunter Muntock White Pepper
1 tsp. The Spice Hunter 100% Organic Italian Seasoning

In a heavy skillet, heat oil over medium heat. When hot, stir in fennel and cook for 1 minute. Add onion and sauté until golden. Add raisins and pine nuts, sauté for 1 minute. Add remaining ingredients and mix well. Bring to a boil. Reduce heat to medium-low and simmer 10 minutes, stirring frequently. When sauce is at desired consistency, taste for seasonings and serve over pasta.
