Strawberry Shortcake

For the biscuits:
2 cups flour
1 Tbsp. baking powder
½ tsp. salt
3 Tbsp. sugar
1 stick cold butter, cubed
2/3 cup milk
1 tsp. The Spice Hunter Vanilla Extract

For the filling:
1 quart strawberries, hulled and sliced
¼ cup sugar
1 tsp. The Spice Hunter Vanilla Extract
1 cup whipping cream

Preheat the oven to 400°F. In a food processor, pulse the flour, baking powder, salt, and sugar. Add the butter and pulse until the mixture resembles coarse sand. Transfer the flour mixture to a bowl and add the milk. Stir until just combined. Roll the dough out on a floured surface and cut with a 3 inch biscuit cutter. Bake the biscuits for 12-15 minutes until they are golden brown. Meanwhile, combine the strawberries with 2 Tbsp. of the sugar and ½ tsp. of the vanilla. Chill for at least an hour until they are juicy. Just before serving, whip the cream with the remaining sugar and vanilla. Serve the shortcake with strawberries and fresh whipped cream in the center.
