Stuffed Zucchini with Mint

½ lb. ground turkey
1 cup cooked rice
2½ cups tomato sauce
1 tsp. The Spice Hunter Mint Leaves
4 medium zucchini
2 tsp. minced garlic
salt and pepper to taste

Cut each zucchini in half lengthwise. Carefully scrape out the zucchini core, creating a hollow center for the filling. Dice the core and reserve for use later in the stuffing. In a pan over medium heat, cook the turkey, seasoning with salt and pepper to taste. When cooked, combine the turkey, rice, mint, reserved diced zucchini core, garlic, and ½ cup tomato sauce. Pour the rest of the tomato sauce into a large saute pan. Stuff each zucchini half with stuffing and place on top of tomato sauce. Pour a cup of water into pan along side of the zucchini. Place a lid on the pan, bring to a boil over medium-high heat, reduce to a simmer and simmer for 10-15 minutes or until zucchini is tender. Remove the zucchini from the pan and reduce sauce to desired consistency. Pour sauce over zucchini and serve.
