Tomato and Sweet Basil Soup with Zesty Italian Crunch Toppers


  • 2 medium carrot, finely chopped
  • 1 large onion, finely chopped
  • ½ cup celery, finely chopped
  • 1/4 cup butter
  • 6 cups of chicken broth or vegetable broth
  • 1 can (29 oz) diced tomatoes
  • 5 teaspoons The Spice Hunter California Basil
  • 1-1/2 teaspoons sugar
  • 1 can (12 ounces) fat-free evaporated milk
  • Salt & Pepper to taste

On the stove top, cook carrots, celery, and onion in butter over medium-low heat for 30 minutes or until vegetables are tender, stirring occasionally. Stir in the tomatoes, basil, sugar, salt, pepper and broth. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Reduce heat to low. Gradually stir in evaporated milk. Remove from heat and let cool slightly. Blend with an immersion blender until smooth. Garnish and serve immediately.
