Vegan Meringues

½ cup liquid from can of reduced sodium chickpeas
¼ tsp. The Spice Hunter Cream of Tartar
½ tsp. The Spice Hunter Pure Vanilla Extract
¾ cup sugar
1. Preheat the oven to 250°F. Beat chickpea liquid with cream of tartar and vanilla until soft peaks form.

2. Add sugar, 1 tablespoon at a time, until stiff peaks form.

3. Pipe into 1” circles on a baking sheet lined with parchment paper and bake for 2 hours. Turn off the oven and let sit in the oven for 1 more hour.
